Brew Guide: Loose-Leaf Tea
All our premium loose-leaf teas are grown on the same family farm as our matcha.
Sencha
Sencha is a green tea with a delicate flavour profile. Sencha should be brewed at lower temperatures with a shorter extraction time otherwise the tea can over-extract tannins, causing it to taste bitter.
- Use 2g of tea leaves for every 200ml of water
- Pour hot water (70-80°C) over the tea leaves
- Steep for 1-1.5 minutes
Hojicha
Hojicha is green tea that has been roasted over charcoal. This gives the tea a unique nutty, sweet flavor profile. Hojicha must be brewed at a much higher temperature and medium extraction time to achieve a bold flavor. It has a low caffeine content and perfect for drinking in the evenings.
- Use 2g of tea leaves for every 200ml of water
- Pour hot water (90-100°C) over the tea leaves
- Steep for 2-3 minutes. (This will vary according to how robust you like your tea to be)
Genmaicha
Genmaicha is a tea with a blend of roasted brown rice and sencha green tea. The roasted rice gives the tea a ‘popcorn’ flavor and pairs well with meals.
- Use 2g of tea leaves for every 200ml of water
- Pour hot water (85-90°C) over the tea leaves
- Steep for 2-3 minutes
